Oven Fried Chicken

INGREDIENTS

8 chicken drumsticks
Chicken seasoning
2 large garlic cloves, minced
2 tbsp minced yellow onion
2 tbsp minced green onion
2 tbsp minced fresh thyme
2 tbsp minced fresh chives
2 tbsp minced parsley
1 tablespoon of chopped fresh marjoram
2 hot pepper, chopped
1 teaspoon of paprika
1 lime/lemon
1 cup of buttermilk OR 1 cup of milk OR
1 cup of yogurt

Salt to taste

Coating: – 1 cup Breadcrumbs (you can buy it, make it from dried old bread or from fresh bread dried or Panko breadcrumbs…

INSTRUCTIONS
Mix all the seasoning with the dairy of your choice and the lemon/lime. Pour in a plastic bag or a container and add the chicken. Leave it marinating in the fridge up to 8 hours.The benefit is that “…marinating the skinless chicken in buttermilk also keeps it juicy. A light coating of flour, sesame seeds and spices, misted with olive oil, forms an appealing crust during baking.” [Eating Well]

  • Preheat the oven at 400F.
  • Mix the flour with the paprika and the onion power. In a other bowl, whisk the eggs.
  • Remove chicken from the mixture and dredge in the flour mix. Then dredge again in the eggs.
  • Finally, roll the chicken in the breadcrumb.
  • Oil the cooking pan and place the chicken drumstick. Lightly coat them with oil.
  • Cook for 50 minutes. Turn them at the 25 minute point.

The advantage of doing this in the oven as compared to in a frying pan is that we significantly cut the calories out of our consumption. Additionally we get to still savor the flavor of the meal in this instance the chicken.
